In the summer of 2015 I was invited to contribute with a recipe for a cookbook project lead by the global campaign Meat Free Monday. Francesca Molica (aka Veggie-ssima La Green Chef on facebook) from the Italian fraction of Meat Free Monday had the awesome idea of gathering meat free recipes from all over the world and present them at COP21 summit. This was of course done to raise awarnes of the positivive impact a reduced meat consumption has on reducing global warming. This was done under the slogan
Less meat = less heat
(Note that the leader of the Danish parti Alternativet was present at the meeting (Uffe Elbæk) and this probably explains why he wasn’t attending the event that my husband was catering for, for the same political parti a couple of days later 😉 ).
So volunteers from over 30 countries contributed their recipes and yet another group of volunteers put it all together in this inspiring little cookbook called Meat Free Monday Everywhere.
Foreword by SIR PAUL McCartney
As many of you will know, none less than Sir Paul McCartney and his family are behind UK campaign Meatfree Mondays. He has written the foreword for the cookbook and was engaging in COP21 in other ways as well. He wrote an open letter to the British Prime minister David Cameron and recorded this message for the COP21 delegates to direct their attention to the matter:
The main criteria for the recipes in the cookbook, besides of course being vegan or vegetarian, is that it is representative of the country in question. So I offered one of my most popular recipes called frækkedeller for the project. The recipe took weeks to perfect and is a vegan equivalent to one of the most commonly known dishes in Denmark, frikadeller – known as meat balls in other parts of the world. You can read more about them in the book 🙂
So I translated the recipe and did a whole new photo shoot (3 times! Since I managed to screw up the camera settings the first two times…)
3rd time’s a charm and this ws the photo they chose for the book, I’m very proud of it. The flowers are the edible Borago Officinalis.
The cookbook and the climate relateded benefits of a lowered meat consumption were presented at COP21 back in december and now finally, the book is ready for distribution. Well if it ain’t…? Yes, those are my frækkedeller on the cover (said the proud frækkedelle-mom). Just a quick note, unfortunatly not all recipes are vegan, since some of them are vegetarian. But except for maybe Luxenburg I bet you can easily veganize all of them!
